This still isn't the good ethnic LES map I was searching for, but it has some interesting material. Note the areas of high cholera and typhoid-right where the factories were. Note all the different theaters there were between 2nd and 3rd Avenues. Note all the saloons and brothels! The information about the Calvert Vaux lodging house that Ms. Torres' 3rd graders studied comes from a very good site called New York Songlines.
